I am a bit of a Flight Sim addict as you know, here's the best fighter PC game ever made (though I still love Jane's F15E): Falcon IV. The game is at least ten years old and its textures are severely dated.
It's never been bettered as a hardcore jet sim game.

...its hard to follow if you havent played the game, but watch for A/A and A/G threats as the F16 ingresses for a bombing run against air defenses (Wild Weasel role).

Falcon was made by Microprose and was released completely broken. Microprose later folded and then game was leaked to the community who took it over. Falcon IV: Allied Force
was released as the product of numerous community modifications (including some of my own inputs - small as they were).

It's campaign mode is unreal: theater war modeled down to the unit level. Imagine flying over the FLOT in Bosnia during the Serb War or in North Korea?
In the North Korean campaign starts with NK troops coming across the DMZ...the UN has to keep em back. If you beat the NK forces, the Chinese and then the Russians come in and help.

Though the terrain textures aren't great you can get top notch textures for a price (folks are selling'em on the web). BTW...check out the 6 degree of freedom cockpit that modders have introduced (Open Falcon project):
